Description
One of the oldest Italian cheeses. It is traditionally made from sheep's milk (pecora means sheep in Italian). Young cheese is eaten in slices, while mature cheese is often grated and used to sprinkle on dishes. It often replaces Parmesan. It comes in many varieties. Pecorino Romano is a salty hard cheese made from sheep's milk. Pecorino Romano is most often used for grating on pasta (as a substitute for Parmigiano Reggiano (Parmesan), however, it is so delicious that it can also be enjoyed on its own, served on a cheese and charcuterie board. Pecorino Romano has a characteristic aromatic, pleasantly sharp, very salty taste. Pecorino Romano is protected by the DOP designation.
