AGING The wine ages for 12 months in French oak barrels, 15% of which are new barrels, while the rest are second and third fill barrels, allowing for the preservation of a pronounced, fruity character. It then rests for an additional 2 months in large foudre barrels made of French oak Allier with a capacity of 22 hl. TASTING NOTE Wine with an intense cherry color of medium depth, clear and shiny. The aroma is dominated by red fruits, strawberries, and cherries with a delicate note of licorice and a subtle, well-integrated barrel that brings balsamic and slightly toasted accents. On the palate, soft and harmonious, with good acidity and rounded structure. The tannins are gentle, well-structured, and the long, pleasant finish leaves a fruity memory. SERVING SUGGESTIONS Pairs excellently with tapas, one-pot dishes, red meats, and semi-hard cheeses such as Manchego, Provolone, or Comté. From classic patatas bravas, through stewed beans with chorizo, to beef Wellington, this versatile wine is suitable for a variety of culinary experiences.
