Thin, extremely delicate yet elastic and delicious Soba noodles are one of the basic ingredients of Japanese cuisine.
Made from wheat and buckwheat flour (in a ratio of ~80/20) with the addition of wild yam (YAM) and salt. The high content of buckwheat makes the noodles
aromatic and gives an interesting texture. Yam – in addition to its health benefits – binds and adds elasticity to the product. Usually, it does not need to be salted. Very quick to prepare (5-7min.).
