This is the first pasta flour "Farina da Salone" from Nisshin Seifun, developed in collaboration with Takahiro Higuchi, chef of the Salone Group. Most traditional fresh pasta for business use consists of 100% durum wheat, but Farina da Salone does not limit itself to this and has been developing a formula suitable to be called fresh pasta from the very beginning. By using a high-pressure pasta-making machine in the pasta factory and producing it with low water content, it has a flexible texture that reverses the image of fresh pasta, which is stretchy, sticky, and chewy.
