Chinkiang Black Rice Vinegar

Chinkiang Black Rice Vinegar – very popular in the southern part of China, is the best of the black rice vinegars. The name comes from the province where it is produced (Chinkiang also known as Zhenjiang). Traditionally made from sweet and glutinous rice varieties. It has a dark color and a deep, slightly "smoky" flavor. It can be used as a substitute for balsamic vinegar.
