Super thin noodles commonly referred to as soy noodles are a popular ingredient in Asian cuisine. They rank third in noodle consumption in China. Although they are called soy noodles, their composition can vary by region of origin. They are most often made from mung beans, soybeans, peas, or other legumes.

Before consumption, simply soak them in hot water for several minutes until they expand and soften. To speed up this process, you can drop them into boiling water for 2-3 minutes. After this time, they will become semi-transparent, soft, and slippery :)
